Modern Bread and Bagel
Modern Bread and Bagel started in New York and expanded west; its Silver Lake shop on Griffith Park Boulevard took over the site of Breadblok, the much-loved gluten-free bakery, and still carries Breadblok's signature sourdough loaves and baguettes. Everything is baked gluten-free, using the company's own flour blends, across bagels, breads, pastries and cafe sandwiches. The FAQ page that documents the gluten-free setup also confirms the Silver Lake address among its four Los Angeles locations. It is the rare chain location that behaves like a dedicated neighbourhood bakery.
